Homemade gingerbread will be a wonderful gift and treat for the New Year. The smell of ginger, cinnamon and freshly baked goods always bring a festive mood. Figured sweets will serve as a bright Christmas tree decoration. Pastries for the New Year or Christmas table are a kind, tasty tradition.
There are many variations of DIY gingerbread recipes for New Year 2025: classic, with different flavors, with fillings as desired. Glaze will add sweetness and beauty to the dish. Spices - tartness and incomparable gingerbread taste.
1. New Year's gingerbread with icing
Any recipe you like can be used as a basis for gingerbread with multi-colored or white icing.. Sugar patterns will not interrupt the taste of the dessert, but will only add a twist to it. Using a pastry syringe or a bag with a nozzle, you can draw a symbol of 2025 on the New Year's pastry.
Colored icing will allow you to decorate the product in an unusual and festive way, for example, in the form of a Christmas tree with glowing garlands or a lace snowflake.
To prepare, you will need 1 egg white and 200 g of sugar. Beat the white lightly, then sift the powdered sugar in portions until the mixture becomes thick, uniform and smooth.
If you add another 60-80 g of powder to the finished icing, you will get sugar paste, from which three-dimensional patterns are drawn. Afterwards, dyes are mixed into the glaze, if necessary.
Icing can be made without using eggs.. In addition to the powder, take water and a teaspoon of lemon juice. Mix the products until smooth and viscous, it is best to use a mixer for this.
The glaze turns out to be a milky, cloudy color, strong enough to simply cover baked goods or draw a simple pattern.
You can make gelatin glaze without using egg whites.For this type of icing you will need 250 g of sugar, water, 5 g of gelatin and 0.5 tsp of dissolved citric acid:
- Gelatin is soaked in 30 ml of water and left to swell completely.
- Pour sugar into a saucepan, add 6 tbsp of water and put on the fire until the crystals are completely dissolved. There is no need to boil the syrup.
- Citric acid is added to the solution. Then gelatin.
- Without cooling the syrup, immerse the mixer in it and beat until white.
Flavors and colors are added to taste. Icing is somewhat reminiscent of marshmallow paste. The acid will not allow it to harden quickly, but it is advisable to use it immediately; in an hour the mass will begin to thicken.
If the freshly prepared glaze drips, it needs to cool a little. The specified amount is enough for one large baking tray of aromatic pastries.
2. Honey gingerbread
Gingerbread for the New Year 2025 can be baked in a slightly different version. To do this you will need:
- flour – 400 g;
- honey – 500 g;
- almonds – 200 g;
- baking powder – 2-3 teaspoons;
- chicken egg;
- cinnamon.
If desired, add 50 ml of rum to the dough:
- Honey is carefully heated in water, cooled slightly and an egg is broken into a bowl.
- Dry ingredients are mixed separately: nuts, spices, baking powder.
- Rum is poured into the dry flour mixture.
- Mix with honey until a soft preparation is obtained.
- The product is baked for about 15-20 minutes.
This dessert also goes well with chocolate glaze or any jam filling.
3. Rye gingerbread
Another variation of the gingerbread recipe. Suitable for dietary nutrition and for those who are intolerant to gluten.
To prepare you will need:
- rye flour – 500 g;
- sugar – 100 g;
- honey – 200 g;
- orange zest;
- cinnamon, cloves.
Before starting work, warm up the honey slightly:
- Prepare a honey mixture with spices and zest.
- Add dry ingredients, mix, and leave the resulting mixture in the refrigerator for at least half an hour.
- Roll out the dough into a layer 3-4 cm thick.
- Bake the products at 180°C until golden brown.
This dessert looks great with patterned white icing or a dusting of powdered sugar.
4. Gingerbread
Gingerbread cookies for the New Year 2025 will appeal to lovers of original sweet pastries. The classic gingerbread recipe is used as a basis, but the composition necessarily includes 50-60 g of ginger. Cinnamon, star anise, other spices - optional.
For smoothness and tenderness, additional starch is used - 3-4 tablespoons. The ingredient is added to the oil mixture or together with flour - this will not affect the quality of the workpiece.

- The readiness of baked goods is determined by their golden brown color.
If desired, the finished chilled treats can be covered with melted milk or dark chocolate.
6. New Year's classics
The classic recipe for gingerbread dough is similar to making shortbread dough. For the basic version you will need the following ingredients:
- flour – 500 g;
- butter – 125 g;
- chicken egg – 2 pcs;
- baking powder – 10 g;
- honey – 120 g;
- cinnamon, ginger – to taste.
Once all the ingredients are prepared, you can start cooking:
- The butter is softened at room temperature and melted together with honey in a water bath.
- If spices are used, they are added to the honey-butter mixture.
- Beat in the eggs and mix until smooth.
- Sift flour with baking powder into the mixture and knead the dough. Then it should cool in the refrigerator under film for at least 30-60 minutes.
- Roll out the cold dough to 10 cm, cut out with molds and bake at 180°C for 10 minutes.
Cool the prepared products, decorate as desired and serve. Do not cool freshly baked sweets in the refrigerator - the operation of the equipment will deteriorate, the shelf may crack from hot dishes.
7. Cinnamon Gingerbread
Cinnamon gingerbread is another classic treat for the holiday. Cut out in the shape of a Snake, wrapped in beautiful packaging, this sweet can be presented as a gift.
For preparation we use:
- flour – 175 g;
- cocoa – 1 tsp;
- butter – 100 g;
- sugar – 100 g;
- egg;
- baking powder 1-2 tsp;
- cinnamon – 0.5-1 tsp;
- cloves – 0.5 tsp.
First, mix all the dry ingredients, then add soft butter and egg. Grind the ingredients into crumbs and form a ball. Then cool in the refrigerator for 1-2 hours. Bake in a preheated oven for 15 minutes. Apply the glaze after the pastry has cooled sufficiently.
You can experiment with standard recipes at your discretion. Crumbs from any nuts you like, candied fruits, dried fruits are good for the dough. The taste is especially vivid in ginger and honey treats.
It is convenient to put filling in the rich gingerbread dough. It is not necessary to take only jam, the New Year's dessert is delicious with chocolate, condensed milk, custard.
