- While baking, start preparing the cream. To do this, combine the ingredients: mix the sour cream with the thickener, add vanilla and powdered sugar. Beat everything with a mixer.
- After baking, let the cakes cool. Cut each (both white and chocolate) into 2 parts. Start assembling the cake: lay out the white and chocolate cakes alternately, spreading each one evenly with the cream mass.

- Line a container (preferably a bowl) with cling film and lightly grease with butter or vegetable oil.
- Grease the bottom of the container with cream (make it by combining 700-800 g of sour cream and 200 g of sugar, you can add a pinch of vanillin). Process the pieces of the cake with the sour cream mixture and lay them on the bottom. At the same time, lay out the nut and fruit mixture. It can be only cherries or you can add pineapples. Squeeze the fruit (about 400-500 g) so that there is not a lot of juice. If desired, add walnuts, cut into large pieces.
- If there is cream left after laying out the pieces of cake, it is better to pour it over the laid mass. Cover everything with a whole cake.
Cover the blanks with film and place in the refrigerator for at least 3-4 hours. After that, remove the film and place the dessert on a plate. Place the container on low heat, stirring constantly (about 5-6 minutes). Add 50 g of butter to the hot mixture, removed from the stove. After it dissolves in the glaze, leave to cool.

After laying out the cake, you can pour the rest of the sour cream over it and decorate it with thin streams of glaze.

To prepare the cakes, use the following ingredients:
- 50 g wheat flour;
- 45 g sugar (add to nuts);
- 170 g nuts;
- 7 egg whites (you should get about 245 g of this product);
- 0.2 kg sugar (for cakes);
- vanillin;
- salt on the tip of a knife.
Stages of baking cakes:
- Lightly dry the nuts in a frying pan, grind them to medium size, combine with 45 g of sugar and 50 g of wheat flour.
- Combine the whites with salt and beat until smooth, until foam forms. It is important to use fermented whites (they should be at room temperature for at least 24 hours).
- Gradually add sugar to the egg mixture, whisking the mixture. To make the mixture stable, add 1-2 teaspoons of lemon juice. You should get a stable mass. Whip at low speed, gradually increasing. On average, you need to whisk for about 9 minutes.
- Add the nut mixture to the prepared protein mixture and mix everything thoroughly but carefully.
- Bake the mixture in the form of two circles (optimal diameter 20-22 cm). The height of the laid out layer is about 2 cm. Preheat the oven to 120° and dry the cakes for 120 minutes.
- It is not advisable to open the oven door for the first 90 minutes of baking. After baking, leave the oven slightly open to cool the protein-nut cakes. In order to feel their crispiness and dryness, they should stand like this for at least 20-22 hours.
- Before assembling the cake, prepare the cream. For it, mix 7 egg yolks with 170 g of sugar (it is advisable to add vanilla), pour in 180 ml of milk. Put the homogeneous mass on low heat. - Cool the cream, add well-whipped butter (260 g). After mixing, you should get a homogeneous mass. Divide the resulting cream into two parts. Put 1-2 spoons of cocoa in one of them, mix.
