Prepare:
- goose carcass (weight up to 2 kg);
- 30 ml soy sauce;
- 2 lemon wedges;
- 4 apples;
- 1 tbsp. honey;
- 2 tbsp. salt;
- 10 pitted prunes;
- 2 tsp pepper mixture;
- juice of half a lemon;
- potatoes (optional).
Stages:
Rub the goose inside and out with spices and salt. Put it in a bag and leave for 1 hour. Then stuff the carcass with prunes, lemon and large apple slices, peeled from seeds. Fasten the edges with toothpicks and tie the bird with thick threads.
Place the goose in a thermal bag and place it on the bottom of a baking dish. Add potatoes cut into large wedges if desired. Bake for about 1.5 hours at 200°. Spread the cooled toasts generously with cream cheese, put lettuce leaves and a few pieces of trout on half of them. Cover the blanks with the remaining bread and cut into 2 portions. As a decoration, attach a pickled cucumber to each mini-sandwich using skewers.

Prepare:
- 120 g walnuts;
- 1 can boiled condensed milk;
- 40 g granulated sugar;
- 400 g flour;

Chicken on salt
To make the dish more aromatic and piquant, marinate the bird in advance.
Prepare:

- rosemary;
- 1 kg of salt;
- thyme.
Stages:
Pat the chicken dry with a paper towel. Rub the inside and outside of the carcass with spices. Wrap the edges of the wings in foil so that they do not burn, and tie the legs with a thick thread. Pour salt into the baking dish and place the chicken fillet side down. Cook for 120 - 150 minutes (depending on the size of the product) at 180 °.
Napoleon cake

Prepare:
- 300 g softened and 300 g frozen butter;
- ½ tsp fine salt;
- egg;
- 1 b. condensed milk;
- 3.5 cups flour;
- ¾ cup sour cream.
Stages:
Combine flour with salt and pass through a sieve. Grate butter and mix with salted flour by hand. Add egg beaten with sour cream and knead the dough. Wrap it in cling film and put in a cold place for 20 minutes.
Divide the risen dough into 7 equal parts, roll each of them into a layer on a work surface dusted with flour. Bake each cake separately for 12-15 minutes at 200° until golden brown. Make the edges even by cutting off excess dough with a sharp knife so that all the cakes are the same size.
Whip soft butter with condensed milk. Form the cake by laying the layers on a flat plate, spreading each of them well with sweet cream and pressing them down. Make crumbs from the scraps of the finished dough and sprinkle it on the surface of the cake. Put the product in the refrigerator for 4 hours.
Budget menu option - only 1000 rubles
The New Year's table does not necessarily have to be expensive. It can be filled with budget dishes that will be no less delicious.
Vinaigrette

Stages:
Combine baking powder with flour and pass through a sieve. Beat eggs with granulated sugar and gradually add flour, cinnamon (optional), without turning off the mixer. Knead the dough, the consistency of which is similar to heavy cream. Wash the apples well, remove the core with seeds, divide into 2 or 4 parts and chop into thin slices.
Pour ½ of the dough into the baking dish. Carefully lay out half of the prepared apple slices, spread the remaining flour mixture evenly on top and lay out the fruit slices again. Bake for 40 – 50 minutes at 180°.
Sprinkle the cooled pie with powdered sugar.

- 400 g each of king prawns, squid and cod fillets;
- 250 g peas;
- 200 g cheese;
- 1 cup fish broth or boiled water;

- 200 ml low-fat cream;

Stages:

Transfer the preparation to a heat-resistant form, sprinkle with finely grated cheese, pour tomato sauce if desired. Bake for 7 minutes at 180 ° until a cheese crust appears. Before serving, sprinkle the dish with chopped fresh herbs.
Salad with red fish
Try to buy the type of rice that is indicated in the recipe.
Prepare:
- 80 g Arborio rice;
- 3 – 4 shrimps;
- onion;
- 120 ml of clean water;
- 250 g boiled pink salmon;
- ½ tsp ground turmeric;
- juice of ½ lemon;
- 3 hard-boiled eggs;
- 15 g fresh dill;
- 50 g each of caviar paste, romaine lettuce and onion;
- salt, spices, lemon, mayonnaise (to taste).
Stages:
Chop the onion into thin half rings, mix with chopped dill, salt, ground pepper, lemon juice and put in a cool place for 30 minutes to marinate, covering the dish with cling film.
Pour the prepared water into the saucepan, add thoroughly washed rice, a little salt and turmeric. After 12 minutes of gentle boiling, turn off the heat and leave the cereal for another 10 minutes in a closed container.
Form the salad using a culinary ring: put cooled rice and pieces of pre-cooked fish on the bottom of a flat dish, spread marinated onions on top and pour the marinade over the ingredients. The next layer is lettuce, cut into thin strips, and lightly coat with mayonnaise.
Cut off ¼ of the sharp part of the boiled eggs. Separate the whites from the yolks and grate them separately. Place the whites on a layer of lettuce leaves, grease with mayonnaise, and spread the yolks on top. Fill the cut egg parts with caviar paste and decorate the salad with them, adding sprigs of fresh dill. Leave the dish for 30-40 minutes to infuse. Remove the serving ring before serving.
Chocolate pudding

- 1 l of high-fat milk;
- 4 tsp cornstarch;

Stages:
Combine cocoa powder with flour and starch, sift the mixture. Dissolve sugar in milk, not allowing it to boil in a saucepan. Beat the yolks with ¼ of the milk, add the flour mixture without turning off the appliance.
After the mixture becomes homogeneous, pour it into a saucepan with heated milk. Cook over low heat, stirring. Put the thickened mixture into bowls, cool and put in the refrigerator until it hardens.

- garlic clove;
- 10 g arugula;

Grate the processed cheese, potatoes on a grater with large holes, and peeled apples, eggs and carrots on a grater with small holes. Combine vinegar with water, granulated sugar and 1 teaspoon of salt.

Prepare:
- 280 g granulated sugar;
- 1 tsp baking powder;
- 6 eggs;
- 100 ml boiled water;
- 300 g butter;
- 5 – 6 tbsp cocoa powder;
- 190 g flour;
- ½ cup condensed milk;
- 2 tbsp powdered sugar;
- 4 tbsp. heavy cream (25%);
- 450 ml milk;
- a pinch of vanillin.
Stages:
Separate the whites of 4 eggs from the yolks, add 90 g of granulated sugar to each of the ingredients. Mix the beaten yolks with cooled water. In a separate bowl, beat the whites until stiff peaks form. Carefully pour in the yolk mixture, continuing to beat the mixture with a mixer at low power. Combine 130 g of flour with 2 tbsp. cocoa powder, baking powder, sift the mixture and mix with the egg mass. Transfer the dough to the pan and spread evenly with a spatula. Bake the sponge cake for about 35 minutes.
Meanwhile, prepare the cream: break 2 eggs into a saucepan, add condensed milk, vanilla, 60 g of granulated sugar and 250 ml of milk. Heat the mixture at minimum heat, stirring continuously, until thickened. Turn off the heat, add 250 g of softened butter and beat.
Divide the finished cake into 2 parts, cutting it lengthwise, pour each of them with impregnation, mixing 200 ml of milk with 2 tbsp. of powdered sugar. Form the cake, generously smearing the cakes with cream and put it in the refrigerator for several hours.
Make the glaze: pour 2 tbsp. sugar, 3 tbsp. cocoa powder, 50 g soft butter and sour cream into a saucepan. Place the pan on the stove, turning on low heat. Wait until the mixture boils slightly, stirring constantly, and remove from the stove. Before serving, pour the cooled glaze over the cake.
