Appetizers always occupy a special place in the New Year's menu. They are prepared quickly and do not require a large amount of products. Appetizers will be appropriate both at a banquet and on a festive table for family. There are both cold and hot options.
Crispy mushrooms in cheese batter
A simple appetizer that takes only 15 minutes to prepare. To enjoy all the flavors, it is best to serve immediately after cooking. If you plan to serve at a buffet, it is better to stick a skewer or toothpick into each mushroom.
Ingredients:
- 400 g mushrooms (champignons);
- 3 eggs;
- 50 g yellow cheese;
- 1/2 tsp oregano;
- 3 tablespoons without a slide of wheat flour;
- a pinch of salt and pepper;
- 5 tbsp breadcrumbs.
How to cook:
Break eggs into a bowl, add flour, spices, grated cheese (preferably on a fine grater). Mix everything with a whisk or mixer until you get a thick dough.
Clean the mushrooms, cut off the stems and dip them in batter. Then roll them in breadcrumbs.
Fry in hot oil. It is important that there is a lot of fat - the mushrooms should float in it.
Transfer to a plate lined with paper towel. Before serving, arrange on a beautiful platter.
Potato balls
A dish for lovers of mashed potatoes, but in an original, festive design. It goes well with homemade garlic dip, but any other favorite sauce will do.
Ingredients:
- 550 g potatoes;
- 120 g wheat flour;
- 1 tbsp potato starch;
- 1 large egg;
- 50 g cheese, for example Grana Padano;
- 1 teaspoon salt without top;
- a pinch of black pepper;
- optional 1 tsp parsley;
- 2 tbsp breadcrumbs.

- sunflower oil for frying.
How to cook:
Boil the potatoes in salted water for about 25 minutes. Drain the water and set aside to cool. Mash with a potato masher or press through a press.
Add flour, starch, egg, finely grated cheese, salt, pepper, breadcrumbs and chopped parsley if desired.
Knead the dough until smooth. Form balls with your hands (you get about 35 balls). Roll each one in breadcrumbs.
For frying, it is better to use a frying pan or a small saucepan. Pour in about 300-400 ml of oil. Fry the balls for about 2 minutes over medium heat. They should be browned on all sides.
The balls should be half immersed in oil for a good crust.
Remove from pan and place on paper towel to drain excess fat.
Serve with your favorite sauce.
Spicy Garlic Bread with Cheese
Garlic and cheese bread is delicious on its own, and is also a brilliant addition to any salad, meat or entree. Bake the bread in a muffin tin, so it breaks off easily and the cheese is wonderfully stretchy.
Ingredients:
Dough:
- 20 g yeast;
- 1 tsp sugar;
- 1 tbsp flour;
- 50 ml warm milk.
Dough:
- 350 g flour;
- 70 g butter;
- 100 ml warm water;
- 2 egg yolks;
- 1 tsp salt;
- a pinch of pepper;
- 1 tbsp chopped parsley.
Sauce:
- garlic butter: 100 g butter, 2 large cloves garlic, 1 tbsp chopped parsley;
- 2-3 tbsp. l. grated mozzarella.
How to cook:
- Add yeast, sugar, flour and 50 ml of warm milk to a bowl. Mix thoroughly and leave for 5 minutes for the dough to rise.
- Pour sifted flour, yeast solution, butter, water, chopped parsley, egg yolks, salt and pepper into a bowl. Knead the dough, trying not to add too much flour, because after baking it will be tough. Leave it for an hour to rise and cover with a towel.
- Place the risen dough on the table.
- Roll into a rectangle. Brush with garlic oil and sprinkle with grated mozzarella.
- Use a knife to cut out large rectangles and fold them in half.
- Place several folded rectangles in a greased form. Bake in the oven for about 30-35 minutes at 180 degrees.
- Serve with garlic sauce.
Breaded Cauliflower
The dish is suitable as a side dish or as an appetizer on its own, often served with various sauces, for example, garlic.
Ingredients:
- 1 small cauliflower;
- 2 eggs;
- 1/3 tsp salt;
- 1/3 tsp sweet paprika;
- 1/3 tsp Provencal herbs;
- 5 tbsp breadcrumbs.
How to cook:
- Wash the cabbage. Separate the florets. Put in boiling water and cook in lightly salted water for about 5-7 minutes.
- In a bowl, combine 2 eggs, salt, red pepper and Provencal herbs. Mix everything with a fork or whisk.
- Dip the florets first in the egg and then in the breadcrumbs. Place on a baking sheet lined with baking paper. Bake for 15-20 minutes at 190 degrees.
- Serve with homemade garlic sauce.
Egg and Cheese Salad
The salad is prepared very quickly and is suitable for New Year, birthday, name day, and even regular evenings with friends. The dish is quite universal and very filling.
Ingredients:
- 7 eggs;
- 80 g small pasta;
- 200 g canned corn;
- 200 g canned peas;
- 150 g hard cheese;
- 6 radishes;
- 120 g chicken ham;
- 3-4 tbsp mayonnaise;
- salt and pepper to taste;
- green onions.
How to cook:
- Boil pasta and eggs (hard boiled) separately.
- Boil hard-boiled eggs for 8-9 minutes - the time is counted from the moment the water boils.
- Drain the water from the cans of corn and peas. Grate some of the cheese (100 g). Cut the radish and ham into cubes.
- Peel the boiled and slightly cooled eggs. Cut 4 of them into cubes and 3 in half.
- Place all ingredients in a bowl. Add mayonnaise (3-4 tablespoons) and season to taste with salt and pepper.
- First, pour half of the mixed salad into a glass bowl. Place the egg halves on the walls and put the remaining salad on top. Decorate with grated cheese (50 g) and chopped green onions. If desired, arrange a radish cut into quarters and half an egg in the middle.
Guacamole
Avocado paste is a fantastic addition to many dishes. It takes 10 minutes to prepare and is suitable for vegetarians and vegans due to the absence of animal products. The main ingredient of the snack - avocado - contains healthy unsaturated fats, while the other components - vegetables - are rich in fiber. So the dish is simple, tasty and healthy at the same time!
Ingredients:
- 2 ripe avocados;
- 3 tbsp lemon juice;
- a pinch of salt;
- a pinch of pepper (preferably freshly ground);
- 1 tsp fresh cilantro or parsley;
- 1 clove of garlic;
- a pinch of paprika if desired.
How to cook:
- Peel the avocado, remove the pit and mash the pulp with a fork or blender into a paste. Then add the garlic squeezed through a press and lime juice, finely chopped cilantro, a pinch of salt and pepper to taste.
- To enhance the flavor, it is recommended to add finely chopped peppers, such as pepperoni or chili, to the guacamole.
- Avocados darken quickly, so it is better to eat the prepared guacamole the same day. If you want to prepare the paste a little earlier, put an avocado pit in it, which will slow down the browning process.
- Herring in sour cream will be an alternative to herring under a fur coat, a dish that has become a classic of winter holidays. It is prepared in less than 15 minutes. It is recommended to serve with fresh black bread, especially with grain.
Ingredients:
- 6 pcs. Matias herring fillets;
- 1 tbsp chopped dill or parsley;
- 1 onion;
- 2 medium sized apples;
- 1 clove of garlic (optional);
- a pinch of sun-dried tomatoes (optional);
- 2-3 tbsp sour cream or mayonnaise;
- 1 tsp horseradish (optional);
- salt and pepper to taste.
How to cook:
- Cut the herring fillet into small pieces, such as cubes or small rectangles.
- Peel and dice the apples and cut the onion into thin feathers. Transfer all the chopped ingredients to a bowl. Add chopped dill (or parsley), horseradish, mayonnaise and, if desired, a clove of garlic pressed through a press and sun-dried tomatoes. Mix everything and season to taste with salt and pepper.
- Place the prepared herring in sour cream in the refrigerator to cool. The dish tastes much better after a few hours.
Salad with broccoli and feta
This simple and tender dish can be prepared in many different ways, but with corn, ham, toasted almond flakes and a light garlic sauce, it turns out very balanced and satisfying.
Ingredients:
- 1 medium broccoli;
- 100 g chicken ham;
- 1/2 can corn;
- 100 g feta cheese;
- 3-4 eggs;
- 2-3 tbsp mayonnaise;
- 1 tbsp thick Greek yogurt;
- 1 clove of garlic;
- a pinch of salt and pepper;
- 2 tbsp almond flakes.
How to cook:
- Rinse fresh broccoli under cold water, cut into smaller pieces and discard the head. Cook in salted water over medium heat for about 10-12 minutes until soft (check with a fork). Drain in a colander and rinse with cold water. Set aside to cool.
- The broccoli should not be overcooked, but not too hard due to the short cooking time.
- Boil the eggs hard, peel thoroughly and cut into thick cubes.
- In a bowl, combine mayonnaise, Greek yogurt, 1 large or 2 small pressed garlic cloves, a pinch of salt and pepper.
- Arrange the broccoli in an even layer in the bottom of a large salad bowl. Sprinkle evenly with corn, finely chopped feta cheese and ham. Layer with eggs and pour over the light garlic sauce.
- Lightly toast the almond flakes in a dry frying pan until golden brown on both sides.
- Sprinkle the finished salad with almond flakes.
Sandwiches with pear and blue cheese
A homemade garlic baguette works great for this recipe, but to avoid overpowering the garlic flavor, skip the extra garlic butter.
Prepare the dish 2-3 hours before serving, because the arugula can dry out quickly and the sandwiches will look unattractive.
Ingredients:
- 2 baguettes;
- olive oil;
- 1 pear;
- 1/2 tsp sugar;
- arugula;
- 50 g blue cheese;
- a handful of walnuts;
- balsamic sauce.
How to cook:
- Cut the baguettes into slices and drizzle with olive oil.
- Place arugula on top of the bread.
- Fry thin slices of pear in hot oil over medium heat. Sprinkle with a small amount of sugar (about 1/2 teaspoon) and fry until caramelized. When the pear slices are soft and lightly browned, remove them from the pan. Let cool slightly.
- Place small pears on top of the arugula.
- Cut blue cheese (for example, into cubes). Sprinkle it on the bread.
- At the very end, garnish with chopped walnuts and drizzle with balsamic vinegar.
Homemade Hot Dogs
This snack will be appropriate for a youth New Year's party. Although older people will also like it due to the large amount of vegetables and the fact that the bun is made by hand.
Ingredients:
- 480 g wheat flour;
- 20 g fresh yeast or 7 g dry;
- 1 level spoon of sugar;
- 200 ml warm water;
- 2 eggs;
- 70 g melted butter;
- 1 tsp salt;
- sesame or poppy seeds.
How to cook:
Crush 20 g of fresh yeast in a bowl, add a spoon of sugar, a spoon of flour and warm water (about 50 ml). Mix thoroughly and leave for 10 minutes to rise.
In the case of instant yeast, do not prepare the dough, just mix all the ingredients and knead the dough.
In a large bowl, add sifted flour, melted and cooled butter, 1 egg, 150 ml of lukewarm water, a teaspoon of salt and the risen dough. Knead all this using a food processor or by hand. When the dough becomes elastic, cover it with a cloth and let it rise for at least 60 minutes.
During this time, the dough should double in volume.
Divide the dough into 8-10 equal parts, lightly sprinkle a cutting board with flour and roll the parts into oblong buns. Then place them on a baking sheet covered with baking paper and press lightly with your palm. Cover the buns with a cloth and leave for 5-10 minutes so that they swell a little. After that, brush them with beaten egg and sprinkle with sesame seeds (or, if desired, poppy seeds).
Bake in the oven at 190 degrees for 20-22 minutes until they are nicely browned and risen.
You can place a pan with water in the oven at a level lower than the main sheet so that there is a little steam during baking, thanks to which the homemade buns will have a beautiful, slightly crispy crust.
Cut the cooled buns lengthwise. Put arugula, cooked sausage, sliced red onion and green cucumber slices on top. Top with your favorite sauce, such as homemade garlic sauce or ketchup.
Rolls with ham, olives and green onions
A quick snack, the idea of which can be used not only for the New Year. Lavash will suit not only round, but also rectangular.
Ingredients:
- 2 wheat flatbreads or lavash;
- a few slices of ham;
- 20 g black olives;
- 150 g of puffed cheese, for example Almette;
- 1 tbsp chopped green onions.
How to cook:
Spread both flatbreads with cheese. Add ham, finely chopped olives and green onions. Roll into a pancake and wrap in cling film. Refrigerate for at least 60 minutes. After this time, remove the film and cut into even slices.
Chicken Quesadilla
This appetizer is often served in Mexican cafes. This hearty, juicy dish will please you with its originality. You can also come up with a different filling.
Ingredients:
- 4 pieces of wheat flatbread or lavash;
- 400 g chicken breast;
- 1/2 tsp chicken seasoning;
- 2 cloves of garlic;
- 2 tbsp. oil;
- 1.5 pcs. red onion;
- 2 small green or red peppers;
- 1 tsp chopped fresh coriander;
- 100 g cheddar cheese;
- 4 tbsp homemade guacamole.
How to cook:
Preheat the oven to 180 degrees. Cut the chicken breasts into cubes, rub with garlic (2 cloves) and sprinkle with chicken seasoning. Transfer to a form covered with baking paper. Bake for 15 minutes.
Meanwhile, pour 2 tbsp of oil into a preheated frying pan. Fry finely chopped red onion with chopped pepper over medium heat. Stir occasionally so that the vegetables do not burn. Fry for about 2-3 minutes. Remove from heat.
In a separate, heated, large frying pan (it is best to use a frying pan with a diameter similar to the size of the tortilla), place the first tortilla and spread it with 2 tablespoons of homemade guacamole. Then quickly add half of the baked chicken and half of the fried vegetables. Sprinkle with half of the grated cheese and fresh cilantro. Cover with the second tortilla and cook, covered, for 1-2 minutes over medium heat. When the cheese is well melted, carefully flip the tortilla over to the other side.
To prevent the filling from spilling out when turning over, you can use a large pancake spatula and put a cutting board underneath it. If you don’t know how to turn over flatbreads or pancakes, then fry it on only one side, but be sure to cover it with a lid.
Place the finished quesadilla on a large plate. Do the same with the other two tortillas. Serve with homemade garlic sauce or tomato salsa.
